Homemade maple syrup

Julien Escot’s recipe, good for for 17 oz: pour 17 oz of maple syrup into a saucepan, then add 3 bar spoons of Cajun spices and 2 halved vanilla pods. Stir while heating, but do not bring to a boil. Strain through a fine strainer into a bottle and refrigerate.
