Fill a rocks glass to the top with ice cubes
Place 6 slices of ginger root into a juicer and juice
Place 4 cucumber slices into a shaker and muddle
Add 0.35 oz of lime juice, 0.5 oz of ginger root juice and 2 oz of dark rum
Fill the shaker with ice cubes and shake
Finely strain into the rocks glass
Top up with ginger beer and stir gently
Garnish with a slice of ginger root and cucumber wheels
