Rim a champagne saucer with finely-chopped tamarind
Pour 0.75 oz of quail egg white, 0.5 oz of lemon juice, 0.5 oz of almond syrup and 1 oz of silver tequila into a shaker
Fill the shaker with ice cubes and shake thoroughly
Strain into the chilled champagne saucer
Garnish with a grapefruit wedge
