Fill the tasting set to the top with crushed ice
Pour 0.35 oz of lime juice, 0.75 oz of sugar syrup and 2 oz of white rum into a mixing glass
Add 3 dashes of Angostura bitters
Fill the glass with ice cubes and stir gently
Strain into 4 shot glasses
Place 20 mint leaves into a blender
Pour in 6 oz of quail egg white, 0.5 oz of lime juice, 1.5 oz of sugar syrup and 5 oz of club soda
Blend and place the resulting foam into each shot glass
Place the shot glasses together
Garnish with a mint sprig, a lime wheel, strawberries, blackberries and raspberries on cocktail skewers
