Make 1 oz of cucumber juice and pour it into the shaker
Pour in 0.5 oz of lime juice and 1 oz of almond syrup
Add in 1 oz of homemade chickpea water and 2.25 oz of sake
Fill the shaker with ice cubes and shake gently
Strain into the rocks glass
Garnish with 5 dashes of umami bitters and thyme
